Apple Bundt Cake with Nuts

This recipe was given to me by my mother-in-law, Barbara Raccio, who got it from Diana Rattray and the guide was Southern U.S. Cuisine.

Ingredients: 
  • 1 1/4 cups oil
  • 2 cups sugar
  • 3 cups flour
  • 3 eggs
  • 1/2 tsp. salt
  • 1 1/4 tsp. baking soda
  • 1 tsp. cinnamon
  • 2 tsps. vanilla
  • 3 cups chopped apples (3 apples)
  • 1 cup chopped nuts
Instructions: 
  1. Combine oil with sugar
  2. Add eggs one at a time
  3. Sift dry ingredients together and add to mixture
  4. Mix in vanilla
  5. Fold in apples and nuts
  6. Bake in greased and floured bundt pan at 325 degrees for 1 hour and 20 minutes. Cool 30 minutes and glaze or frost as desired.
