My Mother-in-Law Barbara's recipe for Pickled Beets
- Approx 24 Beets Cooked and Peeled
- 2 Cups of Sugar
- 2 Cinnamon Sticks
- 1 Tablespoon Allspice
- 1 1/2 Teaspoons Salt
- 3 1/2 Cups of Vinegar
- 1 1/2 Cups of Water
- Combine All Ingredients except the cooked beets in a pot and simmer for 15 minutes
- Pack Beets into jars
- Remove the cinnamon stick and bring the pickling juice to a boil and pour over the packed beets leaving 1/4" head space.
- You can then process the beets in a canner or what I do is just refrigerate the jars.
