Pickled Beets

My Mother-in-Law Barbara's recipe for Pickled Beets

Ingredients: 
  • Approx 24 Beets Cooked and Peeled
  • 2 Cups of Sugar
  • 2 Cinnamon Sticks
  • 1 Tablespoon Allspice
  • 1 1/2 Teaspoons Salt
  • 3 1/2 Cups of Vinegar
  • 1 1/2 Cups of Water
Instructions: 
  1. Combine All Ingredients except the cooked beets in a pot and simmer for 15 minutes
  2. Pack Beets into jars
  3. Remove the cinnamon stick and bring the pickling juice to a boil and pour over the packed beets leaving 1/4" head space.
  4. You can then process the beets in a canner or what I do is just refrigerate the jars.
